Last night we had leftover ham for dinner. Phil made his in sandwiches but I wanted something with a vegetable in it and there was still one yellow squash sitting on the counter. So I fried it with some onion and chunks of ham. I didn't add anything else but it was definitely good!

ReplyDeleteThat looks delicious. Throw an egg or two plus cheese (or not) in there and you could have an omelet or frittata(sp?).
Some time those are the best dinners. Simple and easy.

Deletei do this often during the summer...i like a chopped tomatoe with my squash and ham. not only is is good tasting, but pretty too!
