They aren't big but I use the whole plant and the stems are pretty long right now. It is just like two other garden beds that I have. It is railroad ties filled with leaves, soil and compost. I love it....so, of course, some do-gooder had to come on my facebook post and tell me how they cause cancer. Well honey, guess what, everything thing does!</p><p><br />The facts are they contain creosote and studies have proven that plants do not take this up by the roots so it is unlikely to cause any harm. Not to mention that mine are really old railroad ties and any creosote has probably already leached out. I never see any black on them or get any on me when I touch them (which is pretty seldom). <br /><br /></p><p>So anyway, if you are a do-gooder, you're barking up the wrong tree...so to speak. I plan on putting in at least three more of these beds as the years go on. They are a great source of information but what you have to remember is that those gardeners are growing for their youtube channel. I see a lot of them waste a lot of garden space growing things they don't eat. <br />For instance, I saw one recently that had a whole row of basil. What in the world are you going to do with a 15 ft row of basil? This person mentioned that they had made a lot of pesto from it but just how much pesto are you really going to eat in one year? What ingredients did you have to BUY to go with that basil to make the pesto? Plus when this gardener showed the basil again (going to seed), it didn't look like they had made much from it. This applies to most herbs. People grow them but don't know what to do with them. I grew some volunteer basil this year and I dried and saved a jar full. Probably will pull any that come up next year. I have one sage plant that gives me all the sage I need for the few times I use it in soups. I have an absolutely huge rosemary plant (just one) and I am having to learn new ways to use rosemary. So far I have fried potatoes with it, add it to noodles, on chicken and in my eggs in the morning. We also love thyme on potatoes. Plus I just had some peppermint given to me (it's in a pot) and I probably won't use it a lot but peppermint tea is great when you have a cough. <br />Zucchini is another great example. How many times have you heard someone say, "We had so much zucchini, we couldn't give it away." So why did you grow so many? Do you even like eating it? For me one zucchini plant is probably enough. I like yellow and pattypan squash a lot more but even then, I only like it fresh so I am not going to grow more than can produce more than a few a week. <br />Peppers is a third example that I see a lot. If you use them, that's great. I don't happen to use a lot of peppers. I especially don't use hot peppers. Anything with heat above a jalapeno is probably hotter than I will ever use. And although we like stuffed peppers, we don't eat them a lot. I planted two peppers this year and have a ziplock bag of them cut up in the freezer and I made stuffed peppers once. Now next year I may plant a few more but it won't be a lot. <br />The point is, before you plant something in your garden ask yourself: Do I really like eating this? How much of this can I eat or preserve? This way you won't be wasting space growing stuff that you will never use. Watering, however, is something I really hate having to do. Luckily since we have lived in this house we have had plentiful rain and I have only had to drag that hose out a few times. I never really feel that it does a good watering though. And I also feel I would get better germination when I plant seeds if I had some kind of consistent watering. I wanted something better but needed something cheap. So I did what we all do now. I searched through Amazon and found he cheapest little sprinkler set I could find then found an even cheaper one with TWO sets ON SALE and I bought that one for $14. Hooked the hose to it and turned on the water just a tiny bit with the last little sprinkler head turned open. Then I opened each one working my way down the line until I got to the beginning. It is just cheap plastic parts but I have enough tubing and sprinkler heads and connectors to redo it if I have to. I got some Louisiana Evergreen Shallots from LazyDogFarm (they have great youtube videos) and they came up great and are doing well. Then I tried turnips and beets which didn't come up well. As a matter a fact none of the beets came up and only a couple of the turnips so I planted some in the greenhouse and they all came up so something is happening to my seeds in my fall raised beds. I don't know what but I will just plant fall crops in the greenhouse and then transplant them to the beds from now on. I also have some fall squash out there an we'll just have to wait and see if they do anything before we get a frost. I also planted some cucumbers in pots just as an experiment and they are growing really well but haven't produced anything yet. I started garlic chives in pots in the greenhouse, took cuttings from my rosemary which only two of rooted but they are in a pot in the greenhouse and I cut a bunch of rosemary to dry and put in jars to use in the house. <br /><br />Today the shade cloth came off the greenhouse and it's vents by the roof have been blocked with insulation. I believe we are cool enough now to not need the cloth any more and the plants will benefit from more sun and heat right now. I don't want to turn on the heater until absolutely necessary. <br />Garlic also got planted in the garden today. I am trying a large bulb from the grocery store and a sampler pack from SeedsNow! I have never planted garlic so we'll just have to wait and see how it goes. <br /><br />I work in a daycare just down the street here. I have the after school children ages 5 and up. This year we got to have a little kiddie pool they bought for me for a "garden". We planted beans and zucchini in it and the beans just died when it got hot but the zucchini kept going and produced just a few zucchini for us. I took those and made the kids zucchini bread since they had never tried it. They don't all ripen at once and a lot of them are still on the windowsill getting their last bit of red. I am picking them a little early this year because there is a caterpillar (or worm of some kind) making holes in the red ones. <br />Now we have used several in salads (along with the garden lettuce and cucumbers) and on hamburgers but that still leaves a lot and I wait until I have a decent bunch and cook them up for Phil. We usually buy canned tomatoes because Phil likes them in his spaghetti and mac n' cheese and a few other things. We have a nice sized corner lot with yard area on all sides of the house. The raised beds are in the back yard and so far there are just the three. The two big ones that we made out of the railroad beams that were here and then a small metal one. Our backyard, although surrounded by trees gets a LOT more sun than our yard in the country did and it is more of a sandy soil so no red clay to deal with. Things just grow so much better. This week I had a nice big cabbage harvested but we had a lot to do Saturday and we just didn't get around working it into our meal. Then it is just put in the jars add cold water and put on the lids and leave it for 6-8 weeks before you can it. I still have to do some chalking around some of the older window panes but for now it is pretty weather tight. I have taken my hardier cacti out there and they are doing fine. When we got down to freezing for a few nights, we ran a cord from the shop so I could have a heater in there. <br /><br />This summer ventilation will be more important. The spots at the roof line are filled with insulation and those can come out, the window on the front door can be opened and I bought these solar powered fans that I can put in those open roof line spots to help get the heat out. I tested them out today and they work great. Whenever sun hits the solar panel they stay on. I planted just a few things in the summer garden, yellow and pattypan squash, cucumbers, tomatoes, turnips, onions, beans and herbs. The squash did great. We got a total of 26 pattypan and yellow squash and we sure did enjoy that fresh squash. <br />The tomatoes also did well and we had enough to freeze some though those went quickly. We would have had a lot more but we got a dry spell and then a good bit of rain and most of the later tomatoes split. I got some of them in the freezer and we ate some fresh but the spoiled quickly when they were split. <br />There was a little handful of turnips and the beans grew and produced great but only about 5 of them sprouted and grew. The onions did almost nothing. I think they just didn't get enough water. We didn't even have green onions! The cucumbers didn't do well either. Too hot and not enough water but we got one small one. The rest were yellow and round. <br />The herbs are doing well. More rosemary than I will ever use and basil as well. We don't have huge amounts of produce but everything I did plant is looking great. The tomatoes, however, are loving the heat. I ended up buying a 6 pack of Celebrity tomatoes because my seedlings just did not do well under the grow lights this year. I really think it is because I bought a seed starting mix to plant them in and the stuff just dried out so fast. Next year we'll go with regular potting soil. I planted some yellow, zucchini and pattypan and so far we have yellow and pattypan making squash. I am so excited to be able to have a little garden here but I am trying not to go overboard and plant too much. I have just the two beds. I believe they are about 4 ft. by 4 ft but I haven't measured they may be larger. I am not good at judging size just by looking. Right now one bed is about half full of dirt and is growing some nice looking kale and one rosemary plant. I hope to get that one more dirt for it this spring and get the other one filled. <br />Anyway, about the seeds. I bought them from eBay and I have some from Baker Creek as well but the ones I started early were from eBay. I just found the free shipping just way cheaper than any of the seed catalogs. Not exactly as reliable maybe, but I was willing to chance it. <br />For tomatoes I chose Floradade and Bradley. I mainly just wanted a good determinate variety. I find the indeterminate just way too big. I planted 8 of each. I know that will be too many but some probably will end up in some planters I have. For peppers I planted just 4 of a white bell pepper and 4 ofrom seeds from a grocery store pepper. My daughter got some great peppers from a grocery store pepper last year and I wanted to try just for fun. I also have two of a white pattypan squash and 2 of a yellow crookneck squash. Probably too early to start those but I had 4 squares to fill. And the last set has seeds from my Easter cactus house plant. Also just an experiment. It isn't exactly my dream home of 5 acres in the country though. We are in town...a small town but still in town. We do have a nice little flat yard and a decent sized back yard so we'll just make the most of what we have.<br /></p><p>There have been a few projects already. The little "garage" beside the house turned into a workshop for Phil. We bought some wood and he built some doors for it. From the start, I never liked those beams at the front of the house. They were in a square around the very front of the house and just made no sense, made the yard look smaller and made mowing difficult. But there were eight of them. So I am not doing any real gardening these days. The trees have just grow in so much that there isn't enough sunlight in our yard but I still have pots of things. A few pepper plants, a few squash plants, potatoes in a pot and yesterday I picked up some of the saddest looking tomato plants. They were in little 4 inch peat pots and apparently hadn't gotten much watering even though it has rained a lot here lately. They were marked down to $ .74 and I really think they are only worth about $ .10 but I was inspired by looking at my daughter and her fiancé's tomato plants. They have some wonderfully big plants that they just grew from seeds from a tomato from the store and they have quite a few tomatoes on just 3 plants! Anyway, I thought I would try to save these three. I brought them home last night and watered them real good overnight. This morning I found these gallon pots and with some Miracle Grow Potting Soil (the only kind we seem to have this year), they were re-potted. </div>

<br />Chicken soup is, of course, a really easy thing to do with canned chicken but I got a little more creative and made chicken pot pie today. I started by putting the filling in the crockpot for about 3 hours.<br />

one can of cream of chicken soup<br />
a little water<br />
Diced Potatoes- I only needed 4 medium potatoes<br />
1/2 a small onion, also diced<br />
salt and pepper to taste<br />

Just before putting it in the pie shell I added one of those very small cans (8.5 oz) of peas and carrots.<br />
<br />
Of course, you can add any veggies you want to yours and use frozen or home canned as well. I used what I had on hand.<br />

I made my own crust just using the recipe for a crust from my cookbook. For once it didn't fight me and tear or stick. I brushed egg white on top.<br />

I cooked it in my little convection oven for about a half an hour. Delicious!<br />

At one time cooks used to roast tough meats over the fire and then shred them and make them into barbecue to make them tender enough to eat. These days it is more likely a pork roast is cooked in the oven, then maybe put on the fire- or not, sauce added and you have a good meal.<br />The canned pork I did was so easy since it was already cooked and easy to shred. <br />So my daughter has found the man she wants to be with and moved in with him last year. He asked her to marry him before the pandemic and she said yes....and then it all happened and everything got put on hold until they can actually make plans for the wedding again.<br />Anyway, we are slowly getting to know him more. My first suspicion that he was into self sufficiency was when he put up a shelf in their kitchen and bought grow lights (keep in mind they live in a townhouse with a tiny 5 ft back yard) and he was growing plants....and vegetables.<br />He has a 3D printer and made pots for his plants with it (he likes to make more useful than decorative things with it).<br />Then he got bees. No he didn't put them in that 5ft back yard but on some property that his parents have (where they go shooting--yup). Yesterday for Mother's Day they brought me some of the first honey. It is some wonderful stuff. I saw this recipe on facebook. I am not a real tomato fan but Phil is so I wanted to make it and see if we liked it. It is SO simple to make.<br /><br />
The recipe said roma tomatoes worked best but I just had regular sized tomatoes. They were fairly firm though so that may have been why mine worked fine. You start with your crust though and cook it first. Then you lay down a layer of tomatoes (my crust fell down the sides some so I put some tomatoes up the side too.). If you use the roma tomatoes you might need a couple layers but I cut mine fairly thick so only used one layer. Before you put your tomatoes in the crust though you need to sprinkle them with salt and let them drain in a colander for 10 minutes or so (while you brown the crust) and then blot them with paper towels to remove the excess moisture.<br /><br />Next you just sprinkle on some red onion. Not like a "layer" really just sprinkle some all over the tomatoes. Then you sprinkle fresh chopped basil all over the tomatoes and onions.<br />

The topping is just grated cheese mixed with mayonnaise. I used 3/4 of an 8 oz bag of cheddar and 3/4 of an 8 oz. bag of an Italian blend. You put just enough mayonnaise in it to hold it together. Then you spread it and flatten it out with a spoon on top of your tomatoes, onions and basil.<br /><br />Bake for 30 minutes at 350 degrees or until the top browns.
