Potato Soup

It is my birthday today and I could be lounging. Phil would have happily, without complaint, made supper for us tonight but yesterday Michelle made turkey breast and mashed potatoes (and corn) and she used two quarts of the canned potatoes and only about half of them got eaten. Potatoes that I worked hard canning all day do not get left in the frig until they are thrown to the dog! Something had to be done!
Michelle and I have been talking about potato soup since I got the bacon and potatoes anyway and they are a perfect way to use up the potatoes that didn't get canned (I had about 5 lbs left) and the leftover mashed potatoes. It did mean that I had to peel more potatoes and cook bacon, but it will be worth it later.
I peeled all the potatoes that were left, added the mashed potatoes and some milk--had to make up some dry milk since we are out of regular milk , then added a couple tsp. of garlic(in the crock pot). An onion had started growing in my onion basket so I took the green tops from it and cut them up and put them in, salt, pepper and the bacon bits that I cooked.

I couldn't, of course, use all the bacon in the potato soup so Michelle and I will have bacon and eggs for breakfast.
The bacon grease is, of course, saved to its container in the frig.

  2. Soup looks wonderful. How did you like the canned potatoes? I love using my little potatoes for that. I actually strain my bacon grease and freeze it in 2T containers.

  9. hey, Happy Birthday, Becky...your soup looks divine! on my birthday, my folks offered to take me for lunch anywhere I wanted. I chose to get a "Pig" (pig in a blanket) from a local drive in joint. Cost my folks all of $1.65 to treat me, and I got to try something I'd never tried before--something I strive to do every bd to make them more memorable. Bet making your own potato soup for your birthday was something you'd never done before! ;)

  12. Happy, happy birthday, Becky. Your soup sounds delicious! I love potato soup and have found that a bit of fresh rosemary is really good in it as well as the bacon. Try it sometime!(or dried rosemary, too)
