Canning Carrots

I like the bags of baby carrots and when they are on sale I get some to can. It is pretty easy. Wash them, put them in a pot of water and bring it to boil. Boil 5 minutes.
Fill your jars with carrots, then add boiling water leaving a half inch head space. Add a half teaspoon salt. 
Take out the air bubbles, wipe rims and adjust lids. Pressure can 25 minute at 10 lbs pressure.

  4. The canned carrots you buy in shops are always sweet. Is that just the natural sweetness of the vegetable? I notice you put salt in yours, not sugar.

  5. Hmmm, I've never thought about canning something I didn't grow. How much do they have to be for you to consider purchasing them?

  6. Most of my canning books call for salt. I have never put sugar in my carrots so I take it that the sweetness is just natural.
    I believe this bag was $1.50 and I got 4 jars out of it. To me it just tastes better when I can them myself.

Nice post I now peel and cut whole carrots because they just taste sweeter to me ...those little pre-packaged ones do have chemical they have been washed in and pre-packaged produce – It’s pre-washed, pre-cut, and ready to use – but it costs much more per pound than the other produce – even those cute little baby carrots..thanx for the recipe
