I like the bags of baby carrots and when they are on sale I get some to can. It is pretty easy. Wash them, put them in a pot of water and bring it to boil. Boil 5 minutes.
Fill your jars with carrots, then add boiling water leaving a half inch head space. Add a half teaspoon salt.
Take out the air bubbles, wipe rims and adjust lids. Pressure can 25 minute at 10 lbs pressure.
Most of my canning books call for salt. I have never put sugar in my carrots so I take it that the sweetness is just natural. I believe this bag was $1.50 and I got 4 jars out of it. To me it just tastes better when I can them myself.
wow, I'd never thought to can carrots...I tend to buy only what we can use quickly. will definitely keep this in mind if I run across a good sale. thanks!!
Nice post I now peel and cut whole carrots because they just taste sweeter to me ...those little pre-packaged ones do have chemical they have been washed in and pre-packaged produce – It’s pre-washed, pre-cut, and ready to use – but it costs much more per pound than the other produce – even those cute little baby carrots..thanx for the recipe
they look like cocktail frankfurts! What a well stocked pantry you must have.

ReplyDeleteThe canned carrots you buy in shops are always sweet. Is that just the natural sweetness of the vegetable? I notice you put salt in yours, not sugar.
