Today's Harvest 1/2/13

Got down to the garden today with the intent of trying to find the beds again. They have been completely overgrown with chickweed again. I did do a little weeding though there is still a lot more to do but I got side-tracked when I found, first, the turnips and then, the cabbage (and then I remembered that I had left all the dogs on the bed together and Romeo and the little boy -who ended up being named Scooter- still have rather terrible fights so I didn't get anymore weeding done).
I am just amazed at my little heads of cabbage (there isn't any brown on them, I am not sure why it looks brown in the picture). This is what I should do every year. Totally neglect the garden and it will grow!
So now to figure out what to do with the cabbage. I don't need sauerkraut as I still have some. I may just blanch it and put it in the freezer.

    1. I don't really remember, sometimes in the fall but for us that wasn't too long ago.

  3. Do you know that chickweed is edible? Allegedly some people use it as a salad ingredient. I think I would prefer your cabbages, which look like fine specimens.

    1. I do know that chickweed is edible but I have never tried it...still I think with the amount we have growing in the yard, if the apocalypse ever happens we should be able to survive and the chickens love it too so maybe they will survive, lol.

  6. Wow, you cabbage looks amazing. All I can think about is stemmed cabbage, I can eat this by the pot full.

    When did you plant your cabbage and did you do anything special to get them looking so beautiful?

    1. I love it boiled (I don't ever steam anything). What I did was take the plants and plant them. I don't believe I had to water them more than a few times. I probably spread some 10-10-10 on them once while they were growing. Then I had no time for them, the chickweed grew up all around them and they grew just fine, lol.

  8. Freezing cabbage is a great idea! I find it keeps well in the fridge as well and is great in salad as well as blanched and mixed with mash to make colcannon which is like a big hash.

  10. Shred it or slice it thinly, spread it loosely in the dehydrator. I put cabbage in soups.

  11. We grate it up with grated carrot and grated peppers and onion and cook up and then freeze in portions! We have loads of cabbage here in Tanzania!   12. If you wrap the cabbage tightly in plastic wrap so as to exclude all air, it will keep for months in the fridge or a cool dark place. Check from time to time to remove any bad spots that may start. I didn't waste a scrap of last year's cabbages and didn't have to eat sauerkraut! For big cabbages, peel a leaf at a time until you have enough to chop or slice for slaw or soup or whatever. Rewrap and store. Cabbage just gets smaller and stays fresh.
